- 2 whole chickens cut into 4 pieces each
- 1 cup yogurt
- 1.5 tbsp ginger paste
- 2 tbsp garlic paste
- 2 tbsp Kashmiri chili powder
- 1 tbsp red chili powder
- 1 tbsp cumin powder
- 1 tbsp ground coriander seeds
- 1 tsp turmeric powder
- ½ tsp red food color
- 2 tbsp vinegar
- 3 tbsp oil
- 1.5 tbsp salt or to taste
- ½ cup oil for cooking
- 1 piece of coal
- 1 tbsp oil for coal smoke
Clean and cut the chicken into 4 pieces each.
Mix all marinade ingredients in a bowl.
Coat the chicken with the marinade and let it rest for at least 4 hours.
Heat ½ cup oil in a pot and sear the chicken on high heat for 5-6 minutes.
Lower heat to medium-low and cook until juices dry.
Heat a coal piece, place it in foil, drizzle oil, and cover to infuse smoke.
Remove coal and serve hot with rice or naan.
- For extra crispiness, broil in the oven for the last 5 minutes.
- Substitute yogurt with buttermilk for a tangy twist.
- For a milder taste, reduce the red chili powder.
