Ingredients
  

  • 2 whole chickens cut into 4 pieces each
  • 1 cup yogurt
  • 1.5 tbsp ginger paste
  • 2 tbsp garlic paste
  • 2 tbsp Kashmiri chili powder
  • 1 tbsp red chili powder
  • 1 tbsp cumin powder
  • 1 tbsp ground coriander seeds
  • 1 tsp turmeric powder
  • ½ tsp red food color
  • 2 tbsp vinegar
  • 3 tbsp oil
  • 1.5 tbsp salt or to taste
  • ½ cup oil for cooking
  • 1 piece of coal
  • 1 tbsp oil for coal smoke

Instructions
 

  • Clean and cut the chicken into 4 pieces each.
  • Mix all marinade ingredients in a bowl.
  • Coat the chicken with the marinade and let it rest for at least 4 hours.
  • Heat ½ cup oil in a pot and sear the chicken on high heat for 5-6 minutes.
  • Lower heat to medium-low and cook until juices dry.
  • Heat a coal piece, place it in foil, drizzle oil, and cover to infuse smoke.
  • Remove coal and serve hot with rice or naan.
