- 2 large onions thinly sliced
- 130 g gram flour besan
- 1 tbsp cornflour
- ½ tsp bicarbonate of soda
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp ground fenugreek
- ½ tsp chili flakes
- ½ tsp garlic salt
- 1 tsp minced ginger
- 1 small green chili finely chopped
- Handful of coriander leaves chopped
- 135 ml water
- 3-4 cups vegetable oil for frying
Thinly slice onions and mix with gram flour, cornflour, bicarbonate of soda, and spices.
Gradually add water to form a thick batter.
Heat oil to 180°C (350°F).
Take spoonfuls of batter and carefully drop into hot oil.
Fry for 3-4 minutes, turning once, until golden brown.
Remove with a slotted spoon and drain on kitchen paper.
Serve warm with chutney or yogurt dip.
