- 4 teaspoons fine salt
- 2 teaspoons freshly ground black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- 3 large eggs
- 1/4 cup water
- 1 4-pound whole chicken or 4 pounds pre-cut pieces
- 2 quarts vegetable oil for frying
For the Seasoned Flour:
- 2 cups all-purpose flour
- 1 teaspoon salt
Mix salt, black pepper, garlic powder, and cayenne pepper.
In a bowl, whisk eggs, water, and half of the spice blend.
Cut the chicken into pieces and marinate in the mixture for 12–24 hours.
In a separate bowl, mix the flour and remaining spice blend.
Remove chicken from the marinade, coat in flour, and shake off excess.
Heat oil to 350°F (180°C) in a deep fryer or heavy-bottomed pot.
Fry chicken in batches for 12–15 minutes, ensuring it reaches 165°F (74°C).
Let the chicken rest on a wire rack for 5 minutes before serving.
For extra crispiness, double-coat the chicken in flour.
To reduce greasiness, let the chicken drain on a wire rack instead of paper towels.
Serve with coleslaw, biscuits, or cornbread for a complete meal.
