Ingredients
  

  • 4 teaspoons fine salt
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 3 large eggs
  • 1/4 cup water
  • 1 4-pound whole chicken or 4 pounds pre-cut pieces
  • 2 quarts vegetable oil for frying

For the Seasoned Flour:

  • 2 cups all-purpose flour
  • 1 teaspoon salt

Instructions
 

  • Mix salt, black pepper, garlic powder, and cayenne pepper.
  • In a bowl, whisk eggs, water, and half of the spice blend.
  • Cut the chicken into pieces and marinate in the mixture for 12–24 hours.
  • In a separate bowl, mix the flour and remaining spice blend.
  • Remove chicken from the marinade, coat in flour, and shake off excess.
  • Heat oil to 350°F (180°C) in a deep fryer or heavy-bottomed pot.
  • Fry chicken in batches for 12–15 minutes, ensuring it reaches 165°F (74°C).
  • Let the chicken rest on a wire rack for 5 minutes before serving.

For extra crispiness, double-coat the chicken in flour.
To reduce greasiness, let the chicken drain on a wire rack instead of paper towels.
