- 4 Hard-Boiled Eggs
- 1/3 Cup Chopped Carrot
- 1/3 Cup Chopped Cucumber
- 2 Tablespoons Green Onions
- 2 ½ Tablespoons Mayonnaise
- Black Pepper and Salt to Taste
- Soft Butter
- Slices of Bread
Boil eggs for 10-12 minutes, then peel once cooled.
Finely chop carrots, cucumbers, and green onions.
Mash eggs with a fork.
Add chopped vegetables, black pepper, salt, and mayonnaise. Mix well.
Spread butter on one side of each bread slice.
Spread the egg mixture on one slice and top with another slice.
Trim the edges (optional) and cut into quarters.
Serve and enjoy!
Store leftover filling in an airtight container in the fridge for up to 24 hours.
