Ingredients
  

  • 4 Hard-Boiled Eggs
  • 1/3 Cup Chopped Carrot
  • 1/3 Cup Chopped Cucumber
  • 2 Tablespoons Green Onions
  • 2 ½ Tablespoons Mayonnaise
  • Black Pepper and Salt to Taste
  • Soft Butter
  • Slices of Bread

Instructions
 

  • Boil eggs for 10-12 minutes, then peel once cooled.
  • Finely chop carrots, cucumbers, and green onions.
  • Mash eggs with a fork.
  • Add chopped vegetables, black pepper, salt, and mayonnaise. Mix well.
  • Spread butter on one side of each bread slice.
  • Spread the egg mixture on one slice and top with another slice.
  • Trim the edges (optional) and cut into quarters.
  • Serve and enjoy!
