Ingredients
  

  • 1 large egg
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon fine sea salt
  • 1 cup safflower or vegetable oil
  • 1 teaspoon fresh lemon juice optional

Instructions
 

  • Add the egg, Dijon mustard, vinegar, and salt to a food processor or jar. Blend for 15–20 seconds.
  • Slowly drizzle in the oil while blending until the mixture thickens.
  • Add lemon juice (if using) and mix.
  • Taste and adjust seasoning if necessary.
  • Store in an airtight container in the refrigerator for up to two weeks.

  • Always use fresh eggs for food safety.
  • For a lighter mayo, use half vegetable oil and half light olive oil.
  • If the mayo is too thick, add a teaspoon of water and blend again.
