- 1 large egg
- 1 tablespoon Dijon mustard
- 1 tablespoon red wine vinegar
- 1/4 teaspoon fine sea salt
- 1 cup safflower or vegetable oil
- 1 teaspoon fresh lemon juice optional
Add the egg, Dijon mustard, vinegar, and salt to a food processor or jar. Blend for 15–20 seconds.
Slowly drizzle in the oil while blending until the mixture thickens.
Add lemon juice (if using) and mix.
Taste and adjust seasoning if necessary.
Store in an airtight container in the refrigerator for up to two weeks.
