Triple Chocolate New York City Cookies

Wet Ingredients:
- 125 g baking spread cold or room temperature unsalted butter
- 100 g light brown sugar
- 75 g granulated sugar
- 1 medium egg large egg works too
- 1 tsp vanilla extract or swap with orange, peppermint, or coffee extract
Dry Ingredients:
- 250 g plain flour
- 30 g cocoa powder
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- ½ tsp sea salt
- 300 g chocolate chips a mix of dark, milk, and white chocolate
Cream the butter and sugars until smooth.
Add the egg and vanilla extract; mix well.
Stir in the dry ingredients until a thick dough forms.
Fold in the chocolate chips evenly.
Shape cookies (115–120g each) and chill.
Preheat oven to 180°C fan (200°C conventional/400°F).
Bake for 12–14 minutes, then cool for at least 30 minutes before serving.
For a richer flavor, use dark cocoa powder.
Substitute half of the chocolate chips with nuts for extra crunch.
