Triple Chocolate New York City Cookies

Equipment

Ingredients
  

Wet Ingredients:

  • 125 g baking spread cold or room temperature unsalted butter
  • 100 g light brown sugar
  • 75 g granulated sugar
  • 1 medium egg large egg works too
  • 1 tsp vanilla extract or swap with orange, peppermint, or coffee extract

Dry Ingredients:

  • 250 g plain flour
  • 30 g cocoa powder
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • ½ tsp sea salt
  • 300 g chocolate chips a mix of dark, milk, and white chocolate

Instructions
 

  • Cream the butter and sugars until smooth.
  • Add the egg and vanilla extract; mix well.
  • Stir in the dry ingredients until a thick dough forms.
  • Fold in the chocolate chips evenly.
  • Shape cookies (115–120g each) and chill.
  • Preheat oven to 180°C fan (200°C conventional/400°F).
  • Bake for 12–14 minutes, then cool for at least 30 minutes before serving.

Notes

For a richer flavor, use dark cocoa powder.
Substitute half of the chocolate chips with nuts for extra crunch.
