Ingredients
  

  • 10 oz butter 284 grams
  • 10 oz sugar
  • 5 eggs
  • 10 oz self-rising flour
  • 1 tablespoon vanilla extract
  • A pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a cake pan.
  • Cream together butter and sugar until fluffy.
  • Add eggs one at a time, beating briefly. Mix in vanilla extract and salt.
  • Fold in self-rising flour gradually.
  • Pour batter into cake pan and tap lightly.
  • Bake for 30-40 minutes or until a toothpick comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack.

  • Substitute self-rising flour with all-purpose flour + 2 tsp baking powder.
  • Store at room temperature for 3 days, or freeze for later use.
  • Serve plain, with frosting, or layered with fruit and cream.
